2 cups cooked quinoa 2 large eggs 2 cups baby spinach leaves, finely chopped 1 cup diced onion 2/3 cup grated Parmesan cheese 1/4 cup Panko breadcrumbs 1 clove garlic, minced 1 tsp Oh My Spice Maui Onion seasoning
Instructions:
Preheat oven to 350 degrees. Mix all ingredients together. Form Mixture into balls, about 1 Tbl spoon each. Place on parchment lined baking pan and bake for 15-20 minutes. Let cool for 5 minutes then top with marinara and parmesan and serve!
